  1. In a large bowl, combine the chicken breast, ground coriander seeds, salt, pepper, turmeric, onions, and garlic. Mix well with your hands until everything is evenly combined.
  2. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight.
  3. Preheat a non-stick skillet over medium heat. Add a small amount of oil to the pan.
  4. Remove the chicken mixture from the refrigerator and form it into 4 patties. Place the patties in the hot skillet and cook for 5-7 minutes per side, or until cooked through.
  5. While the chicken is cooking, melt the butter in a small saucepan over low heat. Add the saffron and stir to combine.
  6. Once the chicken is cooked, brush it with the butter-saffron mixture. Serve immediately with rice or bread.
